Recipe Tips

  • Mix all cake ingredients in a mixer for 7 minutes to help the pudding set. I prefer using my Kitchen-Aid mixer for this!
  • Check your cake 10 and 5 minutes before it’s done to avoid overbaking. It’s ready when the edges pull away, and there’s no jiggle.
  • This coffee cake recipe lasts a week in the fridge in a sealed container but only two days on the counter.

Brunch Menu Ideas

When creating a brunch menu, here are some essential factors to consider:

To cater to everyone’s taste preferences, make sure to provide a mix of sweet and savory dishes and light and hearty options. This balance will ensure that there is something for everyone to enjoy.

When choosing dishes and ingredients, select ones that complement each other. For instance, if you make a heavy and flavorful quiche, pair it with a lighter side salad or some fresh fruit.

Ingredients

Cake Ingredients

  • 1 yellow cake mix just the mix!
  • 4 eggs
  • 1/2 cup water
  • 5 ounces Chobani Black Cherry Yogurt
  • 1/2 cup canola oil
  • 3 ounces JELL-O instant vanilla pudding

Cinnamon Swirl & Topping Ingredients

  • 3/4 cup brown sugar
  • 1/4 cup sugar
  • 1 tablespoon cinnamon
  • 1 cup canned cherries

Instructions

  • Preheat oven to 350; grease 9×13 metal pan.
  • Mix all the ingredients for the cake in a mixer for 7 minutes (this is key to make the pudding set). I love to use my Kitchen Aid mixer for this!
  • Meanwhile, mix together brown sugar, sugar, and cinnamon in a bowl.
  • Once the cake is done mixing for 7 minutes, pour half of the batter in the greased 9×13 metal pan. Sprinkle 1/2 of the brown sugar mix over the cake in the pan.
  • Pour the remaining batter on and sprinkle with remaining sugar. Swirl with knife.
  • Place in the oven and bake for 12 minutes. Then open the oven and sprinkle the cherries gently on top of the coffee cake. Do not push them in or swirl, just leave them on top.
  • Close the oven and bake for another 18-20 minutes. Or until the cake is set and is pulling away from the edges. Let it completely cool so it does not crumble when you cut and serve it.

  1. We are cherry lovers here in Ft Collins. Your photo shows cherry pie filling but recipe calls for cherries drained? How about fresh big cherries.
Just served your easy quiche to 3 appreciative friends.

    1. Aw, so happy you loved it. And I am in Fort Collins too!
It is cherry pie filling, I just scooped out the cherries from the filling. I removed the drained piece, I actually don’t know how that got there, because I didn’t chop them either. Not sure how fresh cherries would go, but you could make your own cherry pie filing – and use those – my friend has a great recipe – https://www.mybakingaddiction.com/homemade-cherry-pie-filling-recipe/
